  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup finely chopped zucchini (squeezed of excess moisture)
  • 1/4 cup finely chopped green onions (including green tops)
  • 1/4 cup finely chopped fresh parsley

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a mini muffin tin with olive oil or non-stick spray.
  2. In a large mixing bowl, whisk together the gluten-free flour blend, gluten-free baking powder, baking soda, salt, black pepper, dried oregano, and garlic powder until well combined.
  3. In a separate medium bowl, beat the eggs, then mix in the milk and olive oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing to keep muffins tender.
