  • 2 cups cooked roasted chestnuts (about 200g), roughly chopped
  • 3 medium tart apples (such as Granny Smith), peeled, cored, and diced
  • 3 medium carrots, peeled and diced
  • 1 large celery stalk, diced
  • 4 cups vegetable broth (gluten-free)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh lemon juice
  • Fresh parsley or thyme, chopped for garnish (optional)

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add chopped onion and sauté for 5 minutes until softened but not browned.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add diced carrots and celery, cooking for 5 minutes while stirring occasionally.
  5. Mix in chopped chestnuts and diced apples, coating them evenly with the vegetables.
  6. Sprinkle dried thyme and ground cinnamon, stirring well to combine flavors.
  7. Pour in gluten-free vegetable broth, bring to a boil, then reduce heat and simmer uncovered for 25 minutes until vegetables and apples are tender.
  8. Remove from heat and let the soup cool slightly.
  9. Using an immersion blender, puree the soup until smooth but still slightly textured for a rustic appeal, or carefully blend in batches in a countertop blender.
  10. Return the soup to low heat, season with salt, pepper, and fresh lemon juice to brighten flavors. Heat through for an additional 5 minutes if needed.
  11. Serve warm, garnished with freshly chopped parsley or thyme if desired.
